This collaboration brings together two renowned establishments for a unique culinary journey amidst Bali’s natural beauty, the serene heart of Ubud, Bali’s cultural and spiritual center, and the picturesque seaside of Jimbaran Bay. Each venue offers a distinct approach to ingredients inspired by nature, fostering meaningful connections with the local community.

Nestled on a hill overlooking Jimbaran Bay, Rumari, or “House of the Sun and the Full Moon,” is a distinguished dining destination at Raffles Bali. Headed by Chef Gaetan Biesuz, Rumari celebrates partnerships with like-minded local suppliers, including farmers and artisans.

Every dish on its menu showcases Southeast Asia’s culinary finesse with a contemporary twist. Following the 80/20 principle, Rumari highlights fresh, locally sourced ingredients, with 80% sourced from across the Indonesian archipelago and the remaining 20% imported only when essential.

Chef Syrco Bakker, renowned for his tenure at the two-Michelin-starred Pure C in The Netherlands, brings his expertise to Bali with Syrco BASÈ, established in January 2024. This culinary hub offers a multifaceted dining experience that transcends conventional boundaries. Rooted in Balinese, Indonesian, and broader Asian culinary traditions, Syrco BASÈ emphasizes local produce with core values of Traceability, Nature, and Transparency (TNT).

By spotlighting the stories behind each ingredient, Syrco BASÈ not only elevates them through expert preparation but also underscores its commitment to transparency, sustainability, and collaborative ethos.
